Abstract:
 Food drying is a way to preserve fruit, vegetables, and animal proteins after harvest, that has been practiced since antiquity and a food dehydrator refers to a device that removes moisture from food to aid in its preservation. A food dehydrator uses a heat source and air flow to reduce the water content of foods. The water content of food is usually very high, typically 80 to 95 for various fruits and vegetables. Removing moisture from food restrains various bacteria from growing and spoiling food. Further, removing moisture from food dramatically reduces the weight of the food. Thus, food dehydrators are used to preserve and extend the shelf life of various foods.
Devices require heat using energy sources such as solar or electric power, solar food drying involves the use of a solar dryer designed and built specifically for this purpose. In this report explains how we can use solar energy in drying process as follow: In chapter one explains the drying process and it’s techniques with various types of dryers. In chapter two shows overview about solar energy and how we can use it m different zpplications by using solar technology and different solar systems. In chaptcr three shows a simple design of solar dryer where consists of drying chamber containing u tray put on it slices of onion which we need to dried it from initial moisture content 85 to final moisture content 10 using flat plate collector, with simple economical comparison between using solar collector and electrical heater in drying process.
